Dundee Cake
The almond covered top of this cake is renowned at Scotland tea tables and is popular as an Easter, Christening or birthday cake.
175g butter 75g raisins 75g currants
75g mixed peel 75g sultanas 175g caster sugar
25g ground almonds 75g blanched almonds 3 eggs
Milk ½ tsp baking powder 250g flour
Method:
Cream butter and sugar. Add eggs one at a time and beat well. Add dry ingredients, prepared fruit, and ground almond s. Add milk if necessary to make dropping consistency. Put into greased and lined tin and arrange blanched almond on top to make a pattern. Bake at 180c for 1 1/2
