The pudding takes its name from the cloth, or clout, in which it is boiled.

175g butter                                       450g sultanas                                   225g currants                   

100g sugar                                        1tbsp treacle                                    1 tbsp syrup

1tsp baking soda                             1tsp cinnamon                                 2 eggs (beaten)                

1tsp ginger                                       Milk to mix

Method:

Rub butter into the dry ingredients. Make a well and add, syrup, treacle, beaten eggs and enough milk to make a stiff mix. Prepare the pudding cloth by dipping it into boiling water and then dusting generously with flour. Put the mix on the cloth & tie well with string, allowing a large enough pocket for the pudding to expand. Boil for 3 hours
